October Recipe of the Month: Pumpkin Smoothie

With Halloween just a few weeks away, we thought we’d share one of our favorite fall recipes – a pumpkin smoothie. Not only can the bold and rich flavors of this smoothie spice up a boring diet, the following single serve recipe is a great snack and only takes five minutes to make!

  • 1 cup organic canned pumpkin
  • 1 ripe banana
  • ½ cup coconut milk
  • Agave nectar to taste (to sweeten)
  • Pinch of sea salt (about 1/8th tsp)
  • 1 tsp pumpkin pie spice

Optional Additions

  • 1 tbsp raw honey
  • 1 tbsp bee pollen
  • 1 tbsp flax seed oil

Put all ingredients in blender and process until smooth.

A Little Bit about the Ingredients

As a provider of live-in and hourly home care in the Lehigh Valley, we know the importance of healthy eating for seniors and love this recipe because of the health benefits provided by its unique ingredients. Canned organic pumpkin is shockingly healthy. Rich in vitamin A, iron and fiber, canned pumpkin promotes healthy eyesight, energy production and digestion. Beta-carotene, the antioxidant compound that gives pumpkin its vibrant orange color, has also been shown to protect the body against the cellular damage that leads to cancer, heart disease and early aging.

You also probably noticed the unusual optional ingredients of bee pollen and flax seed oil. While these ingredients may seem strange at first, both have great health benefits for seniors. Bee pollen is approximately 40% protein and is considered one of nature’s most completely nourishing foods which can improve endurance and vitality, regulate the intestines, aid recovery from chronic illness and help build new blood to prevent infectious diseases such as the flu and cold. Flax seed oil on the other hand is packed with both soluable and insoluable fiber, but is also rich in omega-3 fatty acids, the “good” fats that have been shown to have heart healthy effects. There’s even some evidence that flax seed oil can help reduce the risk of heart disease, cancer, stroke and diabetes!
